Summer Salad Recipes

When customers come into the shoppe, we like to talk to them and we usually end up sharing ideas and recipes. I had some requests to share some of my favorite salads, so here is one of my summer favorite go-to's.
I love, love, love arugula. I know for some it can be an acquired taste and to others they just downright don't like it! It is hard to find arugula by itself in my small town, so I usually grow a pot of it right outside my backdoor. It is easy to grow and one thing I have learned is that when picked early, it is much milder. The longer you let it grow, the more pungeunt and spicy it becomes. If you are not a fan of arugula, no worries, just use any lettuce/greens mix that you like. What makes this salad is the light, citrusy dressing, paired with the goat cheese and fruits that you add.
- * Arugula or any Lettuce/Mixed Greens that you prefer
- * Walnuts
- * Goat cheese (I like the logs of goat cheese wrapped in blueberries...yummmm)
- * Fruit of your choice (I recommend blueberries, my favorite come from our local organic blueberry farm just up the road Blueberry Ridge Farm, pears, apples, any crisp fruits are best)
- * Citrus Dressing (recipe below)
Toss & enjoy!
Honey Citrus Dressing Recipe:
- Orange juice 2 Tb
- Lemon juice 1 Tb
- Olive Oil
- Raspberry Red Wine or Champagne Vinegar
- Salt/Pepper a few grinds/to taste
- Honey 1-2 tsp (can be omitted)
I put all of the ingredients in a dressing jar, shake and then pour on the salad and toss. I like to make this dressing in small batches so it can be used fresh.
Another super simple and great tasting light dressing for summer can be made 3 ingredients from the Nicolas Vahe line that we carry. Raspberry Vinegar and the Olive Oil of your choice, I like the Olive Oil with Thyme, along with a few twists from the Salt & Pepper Grinder.
Here are some additional summer salad ideas to try:
1. Orange and Avocado Salad: Combine sliced oranges and avocados on a bed of mixed greens, and top with a simple dressing of olive oil, balsamic vinegar, and honey. Add salt and pepper to taste.
2. Grapefruit and Fennel Salad: Thinly slice a fennel bulb and a pink grapefruit. Toss together with mixed greens and a dressing of olive oil, apple cider vinegar, honey, and Dijon mustard.
3. Blood Orange and Beet Salad: Roast sliced beets and combine with segmented blood oranges and crumbled goat cheese. Drizzle with a dressing of olive oil, lemon juice, and honey.
4. Citrus and Spinach Salad: Combine fresh baby spinach with sliced oranges, grapefruit, and avocado. Top with a sprinkle of feta cheese and a simple dressing of olive oil and lemon juice.
5. Clementine and Pistachio Salad: Segment clementines and toss with mixed greens, sliced red onion, and chopped pistachios. Dress with a simple combination of olive oil, white wine vinegar, honey, and Dijon mustard.
